BETTY KASPER’S BAKED FOOLPROOF CARAMEL POPCORN

My Aunt Betty always made this for Christmas.

1 cup (2 sticks) oleomargarine (or butter)
2 cups brown sugar (packed)
1/2 cup corn syrup (white)
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
6 quarts popped corn (24 cups)

Melt butter - add brown sugar, syrup and salt.
Bring to boil - let boil 5 minutes without stirring.
Remove from heat - stir in baking soda and vanilla - Pour over popcorn (use large roasting pan) & stir.
Bake 250 - 1 hour - stirring every 20 minutes.
Pour out on wax paper and cool. Store in airtight container.
Peanuts or mixed nuts may be added.

I make it for Halloween, along with Paula's Bean Dip and chips.
